Hot, Melty, and Clean: The Only Leftover Turkey Sandwich You’ll Ever Want

I’ve made this recipe plenty of times, but I’m still working on photographing all my dishes (mom life, right?). So until I get the real shot, here’s a stand-in that captures the vibe.

The Leftover Turkey Melt — crispy edges, melty center, and just enough herbs to make your kitchen smell like you’re still in holiday mode.

The day after Thanksgiving hits different.

The kitchen’s quiet, the fridge is packed with random containers, and you’re standing there in fuzzy socks, staring at the leftovers like, now what?

This.

This is what.

It’s comfort food, upgraded.

Here’s what’s going down:

  • Sourdough bread — crisped to golden perfection (bonus points if it’s Holiday Herb & Feta Sourdough).

  • Juicy turkey slices — the star of the show, finally getting the attention they deserve.

  • A spoon of leftover stuffing — adds savory depth and that “Thanksgiving” flavor in every bite.

  • Feta and mozzarella — salty, creamy, and perfectly melty together.

  • Cranberry Kick Sauce or hot sauce — because balance matters, and you need that sweet-heat moment.

Warm, simple, real — the kind of sandwich that makes leftovers feel intentional, not desperate.

What You’ll Need

  • 2 slices sourdough bread (or your favorite clean loaf)
  • ½ cup cooked turkey, shredded or sliced
  • 2 tbsp leftover stuffing or mix (optional but adds amazing flavor)
  • 1–2 tbsp Cranberry Kick Sauce (or hot sauce for spice)
  • 1 tbsp feta cheese
  • 2 tbsp shredded mozzarella (or provolone)
  • 1–2 tsp grass-fed butter or coconut oil for grilling

How to Make It

1. Heat your skillet or griddle over medium heat.

2. Butter or oil one side of each slice of bread.

3. On the unbuttered side, layer your turkey, stuffing (if using), feta, and mozzarella.

4. Add your Cranberry Kick Sauce for a sweet-heat twist — or drizzle on hot sauce for something bolder.

5. Top with the second slice of bread (buttered side out).

6. Grill 3–4 minutes per side, until golden and melty.

7. Slice it diagonally (because obviously) and serve hot.

So go ahead. Pile on the turkey, melt that cheese just right, and take a bite while the house is still quiet. Leftovers never looked — or tasted — this good.
